Slice the zucchini (1 per person approx.) and steam them.

In a pan with hot oil, cook the spinach. Once done, add the cheese and stir until it is integrated. Then beat everything together with a handful of chopped walnuts.

Place two zucchini slices crosswise, and in the center place a spoonful of spinach mixture and wrap with the zucchini.

Finally add some grated parmesan cheese on top and bake for 7'. Add chopped walnuts and serve.
