Chop the onion and if necessary make the pieces of meat smaller, chop the chorizo and ham. The chorizo and paprika can be spicy if you prefer.

Sauté the onion with EVOO and when it is poached add the meat. Let the meat release the water and let it cook in its own juices for 10 minutes.

Add the ham and the chorizo. Let them release their flavors and cook for 5 minutes.

Add the peas (canned or frozen), the paprika and the shot of vinegar. Cook for another 10 minutes.

Once it is cooked, add the tomato can. Let it simmer until the meat is soft, stirring it from time to time.

PS: do not cover the pot at any time. They are better from one day to the next, since they get more flavor.
