With 250 gr. of flour, approximately 8 come out (I made 500 gr. the other day and froze half of them). To freeze the dough, cover with plastic wrap and store. Take out the night before or about 6 hours before baking and store in the refrigerator so as not to break the cold chain.

Flatten and knead a little again as if it were a pizza. Cut triangles more or less equal, put an ounce of chocolate >85% on top and roll from the base to the top to give a croissant shape. Place on a baking sheet on baking paper and cover with a cloth to let them fatten a little (about 1 hour in a warm place).

When they have risen a little, preheat the oven to 180° and meanwhile brush the croissants with a little beaten egg or milk (optional). Bake for 18-20 min. at the same temperature. Take out, decorate if necessary (I melted more chocolate to make a topping 🤤), and let cool on a wire rack.
