PUMPKIN AND GOAT CHEESE CROQUETTES

Cook the pumpkin with a little salt or put it in the microwave until it is soft.

Fry the garlic and spring onions in a pan with a little extra virgin olive oil.

While it is frying, crush the pumpkin and add it to the frying pan with the sauce. Also season with salt and pepper

take out the dough, spread it on a plate and put it in the freezer for 1h/1h30 or as long as possible so that it can be better cooked later, or leave it in the refrigerator overnight.

make the shape of the croquettes (they can be made in the form of croquettes as in this photo or in balls....)

Dredge them in flour, egg and breadcrumbs and place them on a tray with baking paper and a little olive oil on top of the paper to prevent them from sticking.

Once the croquettes are ready, drizzle a little olive oil over them or spray them with a spray bottle so that they get golden brown and the breading gets crunchy.

Leave them in the oven until we see that they are toasted (to taste), take them out and let them rest a little bit to settle. And ready to eat!
