First cut the onions and garlic and sauté them. Once they are sautéed, add the tomatoes in small pieces and let them sauté for a while until they start to melt.

Add the chopped chorizo, and let it sauté and let the flavors integrate, then add cloves, bay leaf, sweet and hot paprika and let it stir for a minute.

Once everything is integrated, add the tripe and add the white wine and let the alcohol evaporate. Once the alcohol has evaporated, cover the tripe with 2-3 fingers of water and leave covered in the pressure cooker for 1 h.

Once the hour has passed, uncover and see if they are soft or if you have to leave a little more. Also if you have a lot of broth, let the broth be consumed and you have it ready. They turn out amazing and I love them, they are very caloric but for an exception.... They are with good processed products, except for the alcohol. Buy some good Iberian tripe as a recommendation. And enjoy!!!!
