Sauté the onion and green bell pepper until it is gradually poached.

In another pan, place the conger eel and seal it over medium heat with chopped garlic, parsley and a couple of bay leaves.

In a separate bowl, cut the potato into medium chunks and pour a little oil, cover with plastic wrap and make some holes, then put it in the microwave for 5-7 mins.

Once the peppers and onions have been sautéed, add them to the conger eel casserole along with the potatoes. We leave it for 10 minutes over low heat so that the flavors are united.
