Grate the tofu and season with sweet paprika, cumin, a dash of EVOO and a spoonful of soy sauce. Mix everything very well and spread on a tray with parchment paper. Place in the oven and cook for 10 minutes or until dry and lightly browned.

When the vegetables are ready, add the red wine and cook for a few minutes so that the alcohol evaporates (no alcohol remains in the dish, it is suitable for children).

Add the crushed tomato to the vegetables and cook for 15 minutes more. When the tomato is ready, correct the salt if necessary and add the tofu. Cook for 5 minutes all together and season to taste with aromatic herbs.
