Chop the vegetables and sauté with a tablespoon of EVOO in a frying pan. Add spices to taste.

Preheat the oven to 180 degrees. In a 15 cm mold put a whole wheat pancake on the base. With the other pancake cut strips of approximately 3 cm and place them on the sides of the mold.

When the vegetables have cooled a little, put them on top of the pancakes. Ideally, add up to a little more than half of the capacity.

Place two eggs on top of the vegetables and bake until the egg is to your liking. Serve with spices to taste on top of the eggs.
