Preheat the oven to 180 degrees while we peel and cut the potatoes baking style. Grease the tray, place them and put them in the oven.

Meanwhile, we cut the onion in big pieces and the peppers in julienne. Once cut, we put them in the oven with the potatoes and leave everything for 20 minutes.

In the meantime, wash and dry the permit and stuff it. In one of the halves we put cheese, ham and cheese again and put the other part of the pigeon on top. It looks like a sandwich.

After 20 minutes put the pigeon on top of the potatoes and vegetables, add a little salt and the glass of white wine. Put in the oven for another 15 minutes.

Simultaneously we make the sauce. Heat the butter in a frying pan and add the finely chopped garlic to toast it a little. Then add the juice of half a lemon and the parsley.

When the oven is finished, remove the tray and pour the salt on top. Let it rest for 5 minutes and it is ready to serve. ready to serve.
