Vegetarian baked white bean meatballs with mushroom and feta cheese sauce

In a frying pan, put a little EVOO and make half the onion cut into small pieces.

When it begins to brown, add previously washed white beans. Heat and when the onion and beans are golden brown, remove from heat.

In a bowl, mash beans with a fork and mix with the onion, ground cumin, garlic powder, parsley, salt, a beaten egg and some bread crumbs. I don't put too much breadcrumbs, just enough so that the dough doesn't stick to your hands and can be shaped.

Shape the meatballs (I had enough for 9 medium-sized ones) and place on a baking tray. Brush meatballs with EVOO and bake in the oven for 18 minutes at 210°. After 10 minutes turn over and brush the other side of the meatball with EVOO and leave in the oven for the remaining 8 minutes.

For the sauce, chop the other half of the onion and cook in a frying pan with a few drops of EVOO. Add mushrooms, garlic and salt. When they are well done, add skimmed milk or cream (to taste of each one) and finally the feta cheese.
