Soak soybeans in cold water for 20-30 min. Chop onion and garlic and sauté in olive oil. Add the soybeans to the pan. Salt and sweet paprika to taste. When everything is done, add the crushed tomato and leave it over low heat for about 10 minutes.

Slice the zucchini with a mandolin (this way, as it is thin, it does not need to be cooked beforehand).

To assemble lasagna: Bottom: tomato. 1st layer: zucchini Alternate soy filling with zucchini layer. Last layer: zucchini, which is covered with slices of mozzarella. I put paprika and garlic powder on top of the mozzarella.

And in the oven! Approximate time: 20-30 min. with the oven preheated. I have put first heat only below and when I had half the time heat up and down, to gratinate the mozzarella.
