While the spaghetti is cooking, fry the mushrooms and spinach in a frying pan with a little EVOO.

In another pan grill the salmon. Cut it into small pieces and put it with the mushrooms and spinach. Turn off the heat when it is mixed.

When the spaghetti is ready, add a spoonful of Philadelphia cheese and a handful of Emmental cheese. Stir over medium heat to mix everything. Add the eggs and continue stirring constantly (so that it does not form a kind of omelet).

We join the spaghetti with the frying pan. Stir a little. Serve and sprinkle oregano on top.
