This recipe I always make it for more than one time because it holds perfectly a few days in the fridge. I have divided the quantities per person to calculate it perfectly. Cook the rice with a little salt.

Cut the carrot into small pieces and cook for about 5 minutes.

Cut the onion into small pieces or julienne, as you like. Cook it with a little bit of EVOO. If it dries too much, add a little water and let it poach. When it is soft, remove it.

Beat the eggs with the egg whites and add them to the frying pan with a little bit of EVOO, make it like scrambled eggs.

When ready, add the shrimp and onion. Let the shrimp cook for a few minutes and add the rice, carrots, peas and corn. Mix everything together.

Add soy sauce, pepper and salt if needed, and enjoy!
