Sift the flour with the yeast and salt in a bowl, and make a volcano with a hole in the center. Pour the water, the vanilla essence and the melted coconut oil into this hole. Mix well until the dough is well integrated.

In a pastry bag we put a wide star nozzle, pour the dough into the bag and shape our churros on the baking tray with a greaseproof paper on top (the traditional or stick-shaped).

Bake at 180 degrees for 20 minutes. Remove and let cool on a wire rack. I have put erythritol on top of some of them imitating sugar... others I have bathed them a little with melted 92% chocolate on top, and others I have left them as they are.

What is clear to me, after making this second batch of churros, that the recipe is different, is that this is a product that has to be cooked and eaten, if you have leftovers should go to the trash because they become leathery immediately and also lose that crunchy touch that gives the oven, so they are of at the time.

The truth is that they do not come out in large quantities, 11 units, so if there are two of you, it is not something huge. Each unit will have about 45 Kcal, so it's not a huge breakfast, I have eaten more caloric things many times. So I think they are great.
