In a bowl, mix the honey, lemon juice, a good dash of soy sauce, a crushed garlic clove and sesame seeds.

We introduce the tuna loins and impregnate them well with the mixture. Let stand at least 30 minutes (better if it is longer).

Cut the onion into julienne strips and poach it in the pan. When it is transparent, add the sauce left over from marinating the tuna to caramelize and add more flavor and remove.

Put the loins in the pan over high heat and cook them on both sides for 1-2 minutes (or more if we do not want them to be raw in the middle).

Optional: serve with a truffled mayonnaise and enjoy!
