Rice with tuna and vegetables

First we put a crushed clove of garlic in a pot with a little olive oil, add the cup of rice and 2 cups of water, add a pinch of salt (little since with the tuna and the olives the dish is already salted).

While the rice is cooking, chop the onion, 2 cloves of garlic, the leek and the carrots. Heat a little olive oil in a pot a little bigger than the rice and add the vegetables that we have just chopped.

Chop the peppers and zucchini and add them when the onion is a little browned. Crush the tomato and add it a few minutes later.

While the vegetables are poached, cut the olives into 4 pieces, drain the oil from the tuna cans and chop the thyme and parsley (if it is natural, it is much tastier).

When the vegetables are poached to taste (I make them slightly cooked) add the rice and stir, add the tuna, the olives and the spices and stir again. We leave it for a couple of minutes over low heat so that the flavors mix well and the olives release the oil.

Let it rest for about 5 minutes and... Let's eat!
