Cut the lobster and sear it in the paella pan with a little oil and set aside.

Chop the garlic clove and sauté in the oil where we have marked the bigavante. Add the onion.

When the onion is poached add the crushed tomato. Add salt, paprika and saffron. Fry the tomato well, I leave it until it starts to stick a little bit to the casserole/pan or frying pan.

Add the rice and mix well with the sofrito. Leave it for a few minutes and then add the fish stock and the lobster. Leave the estimated time, depending on the type of rice and add broth if necessary.

When the rice is ready, let it rest and eat! :)
