Wash the cauliflower very well, cook it with salt for 5 or 6 minutes.

1-While we make the béchamel sauce, heat the milk so that no lumps come out. 2-In a saucepan,heat the butter or AOVE over low heat.once it is hot,add the flour and cook over low heat for 2 or 3 minutes. cook over low heat for 2 or 3 minutes. 3-Add half the milk and stir until it boils gently and we see that it thickens.at this point we add the rest of the milk and repeat the same process.once it has thickened and has the desired consistency we add salt,pepper and nutmeg to taste.

Finally put the drained cauliflower in a baking dish, cover with the béchamel sauce and cheese and bake in the oven at 200°C for about 10-15 minutes.
