I chopped a red bell pepper, an onion and 2 carrots and sautéed them in a wok with a drizzle of oil. Meanwhile I put a handful and a half of rice to boil. You can use quinoa, brown rice, wild rice,.... I have used white rice which is the one I had.

When the vegetables were almost ready I added the corn, previously drained. *About half a can that I had in the fridge. I added it to the wok, seasoned with salt and pepper and added a few sprigs of chopped chives.

I added the rice (previously drained), turned off the heat, integrated all the ingredients and added a handful of grated cheese and organ. I covered the wok to melt the cheese and ready.
