Chop the onion and garlic and sauté with a little olive oil in a frying pan until the onion is transparent (about 5 min. over medium heat). Add the plums and mix, cook for another 5 minutes.

Season the meat with salt and pepper and add the whole tenderloins (or breasts). Sear for about 5 minutes (depending on the thickness) on each side. Add a good splash of brandy (white wine or balsamic vinegar with a little water) and turn up the heat. Let cook until the alcohol evaporates and lower the heat (5min.). Turn off and let cool to room temperature. Slice the meat and reheat over medium heat for a few minutes or in the micro just before serving.
