I have used the special rice for sushi. Wash it very well, until the water comes out clear. Put it in a pot and cook with water that covers the rice and exceeds the level of the rice with a finger height. Add salt, stir only once, cover and cook until the water is completely evaporated. Do not stir the rice, turn off the heat and let stand covered.

The mat is necessary to roll the sushi. Put the nori seaweed with the smoothest part touching the mat and the roughest part is where we will put the rice. The traditional recipe calls for more ingredients to prepare the rice. I have used it as it is and it was delicious. Season as you like. I loved this recipe with vegan feta cheese, black truffle pearls, asparagus in Air fryer and arugula. Pour the ingredients in the middle of the mixture, leaving the edges of the seaweed without rice so that it closes better. Take the mat and start to roll up in a decisive, fast and firm way. Wet the seaweed at the ends so that it closes more easily.
