In the pressure cooker, heat the oil and sear the sirloin. Remove from the pot and set aside.

Cut the vegetables and sauté in the pot for about 10 minutes.

Put the sealed sirloin together with the vegetables, season with salt and pepper and add the wine. Let it reduce and add the vegetable broth, covering a little more than half of the sirloin. We close the pot and over medium heat let it cook for 20 minutes.

Once the cooking time is over, remove the sirloin and fillet it. Grind the vegetables and plate them. Buon apettito!
