Sauté the cayenne and garlic in the olive oil and when it is almost ready add the sesame seeds and a minute later the soybeans. Let it boil for 2 more minutes and take it out. Once cold, add the lemon juice.

I buy the frozen tuna in cubes, cut them about 1 cm and add the previous mixture. I let it macerate for about half an hour.

To assemble the dish I cut the avocado into slices and place the marinated tuna.

The sauce I put on top to decorate is made by making a light aioli and adding a little onion, ground cayenne, lemon juice, thyme, oregano, a little tomato sauce and half a teaspoon of Gijon mustard.
