Mix the dry ingredients (flour, baking powder and pinch of salt). On the other hand, mix the eggs, butter, milk and vanilla flavoring.

Gradually integrate the dry ingredients into the more liquid mixture (you can do it by hand, but I used a glass mixer).

Heat a frying pan over medium-high heat and sprinkle with a few drops of EVOO. Pour the mixture to make the pancakes, and once they start to bubble on one side, turn them over.

Add your favorite toppings (85% chocolate, nut cream, fruit...) and enjoy! 👏🏻
