In a sauté pan add a few drops of EVOO and sauté the noodles until they are toasted. Pour them on a plate with kitchen paper to remove excess oil.

In the same sauté pan sauté the onion, garlic, peppers and add paprika and salt (to taste) and when they are poached add a spoonful of crushed tomato and stir everything a little bit.

Add the noodles to the vegetables and add water to cover everything and let it reduce. When there are 2-3 minutes left and there is still some broth, add an egg and cover and let the water be consumed.

When ready, add to the dish and let stand for 5 minutes so that the noodles remain stiff and eat.
