Peel and grate the potatoes, shred the broccoli (300g) in a food processor. In a bowl mix both ingredients together with 1 cup of grated cheese, salt and pepper to taste.

Grease the quiche mold with AOVE and pour the mixture. Spread and flatten with the base of a cup to make the shape of the dough leaving the edges.

Bake in the oven at 180掳C for 25-30 minutes.

While the base is baking, we will make the filling. Cut the remaining broccoli into small pieces (150g), the tomato into cubes and in the food processor we crush the onion.

In a bowl beat 4 eggs, add the broccoli, tomato, onion, a splash of milk and half a cup of grated cheese. Season with salt and pepper and stir until all the ingredients are combined.

When the dough is ready, take it out, if it has deformed a little it can be rectified by flattening it a little with a fork. Pour the filling and expand over the mold.

We put it back in the oven at 180潞C for 30 minutes.
