Cauliflower rice with chicken and baked potatoes

Cut the potatoes into wedges and soak them in water for 20 minutes. Set aside.

Grate the cauliflower or put it in a food processor until it looks like rice. Chop the onion, tomato and carrot. Put the peas (in my case as they were frozen) to boil together with the carrots for 4 minutes. We put to boil the breast until it is done and we cut it into pieces.

Once the potatoes are ready, preheat the oven to 200 degrees. drain and dry them very well. In a bowl add the potatoes with salt, olive oil, garlic powder and parsley. In a tray we put baking paper and put the potatoes separately. Bake in the oven for 20 minutes or until golden brown.

In a frying pan (over medium low heat) put the olive oil, onion, tomato, carrot, peas and wait until everything is well integrated. Then add the cauliflower and add salt, garlic powder and parsley (do not add water) and after 5 minutes add the chicken. We wait a few more minutes.

Remove the potatoes and serve with the cauliflower rice with chicken. And enjoy! Healthy, delicious and fast!
