Preparación de la receta

Soak the pitted dates in hot water for 20 minutes. Mash the carrot

Add the dates and eggs to the mashed carrots and mash.

Add the remaining ingredients (EXCEPT CHOCOLATE 85%). I have been adding ingredient by ingredient and with the help of a whisk I have been mixing everything well.

Turn the oven on at 180 degrees in up and down mode, so that it heats up. In the meantime, we pass the mortar over 100gr of the 85% chocolate bar so that it is in small pieces and we add it to the dough. We do exactly the same with the walnuts and add them to the dough.

Line a mold of about 15 cm with baking paper (I have put a little coconut oil on the sides so that it does not stick) and pour the dough into the mold. Put it in the oven (I have placed it in the middle of the oven) and leave it between 45-50 minutes. EACH OVEN IS DIFFERENT, CHECK IT.

When done (check with a knife) remove from the oven and let cool in the pan.

When it is cold unmold and with the 100gr of chocolate 85% melt it for 1 minute in the microwave (I have added a teaspoon of coconut oil, it is optional). Pour the chocolate on top of the cake and add the topping that you like, in my case I have put sliced almonds.

If you want the chocolate to be hard, put it in the refrigerator for a few hours. It is now ready to serve and enjoy.
