We poach the eggs with water (90%) and vinegar (10%) in a pot. When the water and vinegar are boiling, remove from the heat and carefully introduce the eggs and cook them for about 3 minutes.

Toast the bread and place the salmon on top.

Slice half an avocado and place it on top of the salmon.

Add the eggs on top and add oil and very small chopped chives.
