Fry the shrimp heads and shells. Make a broth with the shrimp heads and shells, hake head and monkfish. Put the oil from the shrimp heads in the paella, add the peppers, garlic and chicken. After a while add the squid and clams (previously washed in water and salt). Add chopped saffron with 1 clove of garlic and add grated tomato. After a while add the prawns and the rice (80g/person) or the fideuá (100g/person) (in the case of using fideuá, add it when the broth is boiling). Add 2 ladles of broth per person + some extra if necessary. Leave until it cooks
