SEAFOOD: Prawns and crayfish: With oil, salt and pepper, we pass them 20" on each side in the pan or griddle. Shrimp: Just peel Shellfish: Boil until they open with sea water and bay leaf. Squid and cuttlefish: Cut into rings and cubes, respectively. Spider crab: Boil with sea water for 15 minutes, open and remove the meat.

RICE: 1. In a paella pan or casserole, add the sofrito, the fumet and the saffron, and salt it to taste. Then add the rice, the cuttlefish and the squid, and cook as long as the rice package says. 2. When there are 5 minutes of cooking time left, add the shellfish and the peeled spider crab. 3. When there are two minutes left to cook, add the peeled shrimp. 4. When the cooking is finished, add the prawns and the crayfish and leave to rest for 5 minutes covered with a cloth.
