Vegan textured soybean burgers

First of all, put the soybeans to hydrate for 20-30 minutes.

Chop the onion and garlic and poach them in a frying pan with a little EVOO over medium heat with a little salt.

Once poached, add the soybeans (drained and raw) with the onion and garlic to the blender. Add the spices (garlic, parsley, sweet paprika and very little hot paprika). This is completely to taste; for example I don't like spicy so you can omit it or add more.

Once it is crushed, add the oat flour and mix with a fork until it is integrated. It should be a dough as shown in the photo. Neither too wet nor too dry. You can make the burgers by hand.

Make the hamburgers and put them in the pan with a drizzle of EVOO over medium high heat. I have had them covered so that they are also cooked on the inside since the soybeans are raw.

More or less 5 minutes on each side, although it also depends on taste. If you like them more toasted, less... The texture is very similar to that of a conventional hamburger, I leave a photo of the inside.
