Zucchini stuffed with vegetables and quinoa

Make the quinoa (in my case I had it already made so I had to save that time). Cut the onion, tomatoes and peppers into small pieces. Heat a frying pan with the minimum amount of EVOO. Pour the mixture into the pan and sauté.

Wash the zucchini and cut into two halves lengthwise. Make zig-zag cuts in the flesh area. Put it in the microwave for 5 minutes so that it softens and the filling can be easily removed. In the meantime, preheat the oven to 200°.

Once the zucchini has been heated, remove the stuffing and pour it into the same bowl as the quinoa. Pour also the sautéed sauce once it is done. Mix everything well and fill the zucchini with the mixture.

Put the zucchini in the oven and bake them at 200° for 15 minutes. Take them out and let them cool (if you don't want to burn them😜). Ready to eat!
