Grate the carrot and add it together with the eggs, EVOO, baking powder, flour and cinnamon to mix. Add 3 dates previously crushed with water/milk to form a paste. Add the walnuts into the mixture.

Add to the mold and place in the air fryer, programming 25 minutes at 160 degrees. Take it out and turn it over to cook from the bottom (5-10 min). Open the cake in half with a knife and introduce both sides (5 minutes each) to finish cooking on the inside.

While it is cooking, we make the frosting. Four heaping tablespoons of Philadelphia cheese and two tablespoons of date paste. Taste and make to taste. Add 50 ml of milk.

Take out and place a spoonful of the light Philadelphia cheese and date paste mixture in the middle of the cake. Cover the whole cake with the remaining frosting and add nuts to decorate.
