Wash and cut the eggplant into slices and sauté them in a pan with EVOO for about 10 minutes.

For the poached eggs: boil water, add the juice of half a lemon, stir with a spoon quickly to form a whirlpool and add the egg. Leave it for 2-3 minutes.

When the eggplant is cooked, add it to a plate and sauté the prawns for 5 minutes.
