We cook the rice, previously rinsed. Strain, rinse again and let it cool, it is important that it remains loose.

Cut the beef into strips and season with a tablespoon of soy sauce, white pepper and a pinch of ground cayenne. Brown in a frying pan with a drizzle of oil and set aside.

Chop a clove of garlic, cut the spring onion and mushrooms into quarters. Chop the stem of the Dino spring onion into julienne strips and set aside.

Add a tablespoon of oil to the pan and place the onion and mushrooms over high heat for a couple of minutes.

In the same frying pan, make a hole and add more oil and chopped garlic. When the garlic is golden brown, break the egg on top (two if they are small). Stir the egg and when it is half set add the rice and stir all the ingredients well.

Then add two more tablespoons of soy sauce and a little white pepper. Taste for salt, add the veal previously set aside and integrate everything.

Once the fire is off, add a dash of sesame oil and the spring onion stalk and serve.
