Chop the onion, garlic and squid into small squares. Then, put the oil in the paella pan and poach the onion. Later, we add the garlic. In a casserole to part, we put to heat the broth.

When everything is poached, we mark the prawns (so that the onion gets taste 🤤). Remove the shrimp and add the squid that we have chopped into small squares.

When the squid has released all the water, add the rice. Sauté the rice for a couple of minutes and add the ink sachet. Stir everything well so that it is well distributed and add the salt.

After a couple of minutes, add the broth, which we have heated separately, and cook it for 3 minutes over high heat. Then, depending on the type of rice (if it takes more or less time) we cook it over medium-high heat. Watch out so that it does not burn, if you see that you have put a lot of broth that is medium-low heat.

After 10 minutes put the prawns in the paella pan to finish cooking with the chup-chup.
