We split the avocado, remove all the pulp, add a little salt and a drizzle of oil. Mash it until it is completely homogeneous.

While we prepare the avocado, we toast the bread. I used 100% whole wheat bread from my favorite bakery (Caracoche).

Spread the slice of freshly toasted bread with a layer of avocado.

Put a layer of 0% fresh cheese (the thickness of the layer depends on each one, I put too much because I like it that way). Add some fresh spinach leaves.

Cut the red onion (or the one you prefer, although it is totally optional). We put to taste on the toast.

Put the salmon slices. Add dill and pepper to taste.
