Put the raw lentils in a pot, I use the smallest ones, but you can also use the typical red lentils. The water has to exceed the lentils about three fingers, we put it to boil 20 minutes or until they are done.

Peel and chop the onion, the three garlics and the three tomatoes and poach them in a pan with a little olive oil. Season with salt and pepper. When it is well poached add the spoonfuls of all the ingredients: ginger, coriander, curry, turmeric, masala. Let it cook for five minutes and add the coconut milk, you can also use cream. Let it cook for 5 more minutes.

Add this mixture to the lentils and let it rest. I let it simmer for 10 minutes so that all the ingredients mix well. At this point I add a tablespoon of butter. The consistency has to be rather thick.
