Cut the eggplant into thick slices and put them on the baking tray (with baking paper) with a little oil, salt and pepper. Cover the tray with aluminum foil and bake at 190° for 20 to 30 minutes.

Cut the tomatoes and mozzarella balls into slices.

When the eggplants are ready, make the towers: slice of eggplant-tomato-cheese and finishing with a slice of cheese. Sprinkle with oregano and a little oil and bake in the oven for another 15 minutes.

While you poach the garlic and onion, when it is poached add the crushed tomato, a little salt and herbs. When it is ready add the chopped basil.

Serve with the sauce at the bottom of the plate and then a tower of eggplant and some fresh basil leaves on top.
