We take a large jar (250 gr) of fresh cheese burgos skimmed, separate two yolks from the whites and put by hand the oil and vinegar.

Put the egg yolks with the oil and vinegar in a blender and blend. Add salt.

Finally, crumble a little bit of the fresh cheese and add it to the blender. Blend a second time at low power for one minute, until we see that it is integrated. Taste and adjust the salt if desired. It will form a "false mayonnaise" with a texture equal to the normal 馃憣馃徎 With these measures 260 grams of mayonnaise come out (to me it gives me to make a salad for 2 pax for example).
