Cut the shallots and the bell pepper in not very big pieces. Put the oil in a frying pan and when it is hot, add the finely chopped garlic clove.

When it starts to brown, add the shallots and bell pepper and cook until everything is done.

Add the cod and cook together for 5 more minutes.

Remove from the heat and let it drain in a fine sieve. While it is draining, beat the eggs in a bowl and add a pinch of salt. In the same frying pan that we have made the sofrito we put a spoonful of oil and we put it to heat.

Mix the sofrito in the bowl with the eggs and pour everything into the hot frying pan over low heat. When it is set, run a shovel around the edges and turn it over with the help of a plate. Carefully pour everything back into the frying pan and shape it with the wooden shovel along the sides.
