▫️Para the base: Crush 8 pitted dates + the nuts we want (I added about 1 handful of cashews, 1 handful of almonds and 1 handful of hazelnuts). Grind at a high speed because we don't want it to be a "mush" but small and mixed pieces. Then add in a bowl the mixture with 4 tablespoons of oat flakes and with a little melted butter mix everything together and make a slightly moist paste. Place in the cups as a flat base and put in the freezer 🥶.

We make date paste with 4 units and a little milk. On the other hand we will also leave 5 sheets of neutral gelatin in water for 10-15 minutes.

▫️Para the cheese layer: In a saucepan over medium heat with a glass of milk also pour a tub of cheese spread (I put 2/3 of the tub but then added a little Mascarpone to compensate and it goes very well too). When it boils, add the date paste and stir well. After 2 minutes and with the gelatin sheets dried with paper towels, add them to the mixture and continue stirring with the whisk but turn off the heat. Let it stand for 10 minutes at room temperature and then pour it into the little glasses we had in the freezer. Let it also rest in the freezer until it has solidified (min 30-45 minutes).

▫️Para the coverage: ANY FRUIT is OK! You only have to make a puree by crushing any fruit with a little water (it also depends on the amount of water in the fruit itself) it has to be liquid but the flavor of the fruit must be noticeable. It also depends on how sweet you like it here you could add more date paste to sweeten it. Place the mixture in a saucepan over medium heat and follow the same process as above. Once it boils, add the previously hydrated and dried gelatin sheets (3 is enough this time because this layer is thinner). Remove from heat and stir and let cool 10 minutes at room temperature. Then pour over the cups and cool again in the freezer/fridge 😊.
