Pasta with avocado pesto and poached egg 🥑🥚🍅

Cook the pasta in salted water. Cut (half) zucchini and cook it in salted water for about 10 minutes. I have cut it with a potato peeler in slices, so that it is like a paste later.

For the pesto: Gather the cheese, walnuts (about 5) and basil and whisk together. Add the avocado (half), the garlic, a little juice of half a lemon and a little EVOO. Whisk.

In a frying pan with a little EVOO, brown some garlic (I used a large one, half for the pesto and the other half here). Add the cherry tomatoes cut in half and sauté. You can also add black olives here (I didn't have any).

Add to the pan the cooked and drained zucchini, the spaghetti and finally the pesto. Make the poached egg (I watched how to do it on youtube 🙈).

Set aside the pasta with the pesto, put the poached egg on top and add cheese, oregano, etc. to taste. 🤤🤤🤤
