Fry the onion, once it is golden brown add the carrot, zucchini, mushrooms to get the flavor, add a quarter part of the avecrem, after it has reduced a little add the tomato that has been previously fried with garlic and crushed and add oregano, thyme and other spices to taste and finally the tuna. All this over low heat.

To make the béchamel sauce, put half a cup of wheat flour with half a cup of olive oil on the heat and stir until golden brown. Then add half a liter of milk while stirring until it comes to a boil. Add salt, pepper and nutmeg and stir until it thickens.

Add in a bowl slices of eggplant previously cut to make a base, add sofrito, add bechamel sauce and sliced cheese, repeat the same procedure and finally add a last layer of eggplant bechamel sauce and bake for 10 minutes at 250 (preheat the oven before) then lower to 150 for 10 more minutes and then add mozzarella cheese and choose the gratin option. Bake for 5 to 7 minutes until golden brown. And enjoy!
