Order the sea bass in fillet, boneless and skinless and cut it first in slices (vertically) and then in small pieces diagonally.

Squeeze the limes and add the chopped garlic clove and cilantro (very small). If you like it spicy, add aji limo (only in Latin American stores), otherwise try with fresh chili pepper.
