Chop a clove of garlic and the same amount of fresh ginger. Sauté them in a tablespoon of extra virgin olive oil for a couple of minutes.

Then we sauté our vegetables. This mixture of frozen vegetables that you can find in Mercadona is formed in a variable proportion by: ▪️Brotes soybeans ▪️Puerro ▪️Cebolla purple ▪️Bambú ▪️ Mushrooms ▪️Zanahoria ▪️Col white It contains no flour, no refined oils, only vegetables without additives. And although it is always better to use fresh and seasonal vegetables, this mix is perfect for this express soup.

Add a teaspoon of curry, a teaspoon of paprika and a chopped dried cayenne*. (*) If you do not like spicy you can remove the cayenne.

Cover with our vegetable stock and bring to a boil. When it boils, season, lower the heat to the minimum, cover and let it cook for 15 minutes.
