First, chop the red bell pepper, the green pepper and the onion. With the potato and the zucchini we make slices.

While the oven is heating up. Fry the potato a little in AOVE (do not fry it whole so that it finishes cooking in the oven). Then we fry the peppers and the onion, using the same oil. I grill the zucchini and then bake it, I like it to be soft. If you prefer, you can bake it alone. In this case, it will have to be cut into thin slices to be done better. Place the potato on a tray and sprinkle with a little salt and black pepper. On top of the potato, place the zucchini slices. Put the pieces of cod loin on top and the sofrito covering the latter.

Bake for 20 minutes at 200 degrees and... straight to the plate! ✨
