Chop the onions and sauté them in the pan with EVOO (I used the spray).

Add water and the rest of the diced ingredients.

Bring to a boil over low/medium heat and keep turning it so that it does not burn or stick. If necessary, add more water.

Once the potato, carrot and broccoli pieces are very tender, turn off the heat and let stand for a few minutes.

Whisk everything and add a little coconut milk to give it a creamier texture. If the mixture has a lot of water in it before beating, you can drain it a little. The more water, the more liquid the puree will be.
