From the lemon and orange we take the zest. If we do not have date paste, we prepare it by covering the bottom of a cauldron with the dates covered with a little water and let it boil for 3 minutes, then grind and wait for it to cool down a little.

Pour the milk, the rice, the lemon and orange zest, the cinnamon stick and the pinch of salt into the cauldron. Over low heat let it cook for 50 minutes, trying to stir as much as possible to avoid sticking. If you do it with a food processor as I did, put the above mentioned ingredients in the mixing bowl and program 35 min, 90°, speed 1 with reverse.

After 50 minutes in the cauldron or 35 minutes in the robot, add 4 tablespoons of date paste + butter + a dash of vanilla flavoring. In the case of the cauldron, we leave 10 more minutes stirring and with the robot, we program another 10 minutes also taking into account the same temperature, speed and reverse gear.

Let it temper, remove the lemon and orange zest, and the cinnamon stick. When serving, add a little cinnamon powder and enjoy!
